can you believe this monday is memorial day?!
we are almost half way through 2010 and i say its time for some hot weather and bbq's.
bring it on!
i made these fun little cupcakes for a beach day bbq last year and they were a huge hit.
i'm thinking you should whip up a batch for your memorial day festivities.
they are so simple to make and just look at them!!
ADORABLE.
yields:: 24 cupcakes
1 box of yellow cake mix
1 box of brownie mix
1 batch or can of white frosting
yellow, green and red food gels
sesame seeds
Make cake according to directions on box. Line muffin tin with cupcake liners and fill 2/3 of the way with batter. Bake according to cupcake directions. Once the cupcakes are baked allow to cool completely.
Make brownie mix and bake according to directions. Allow to cool completely.
Once cooled, remove paper cupcake liner from yellow cupcakes. Cut the cupcakes in half.
Use a round cookie or biscuit cutter that is the same size as the cupcakes, cut out circles of brownies.
In three small bowls, evenly separate the frosting. Add red, green and yellow food gels to frosting for your mustard, ketchup and lettuce.
Once the frosting mixed with no streaks and you are happy with the color, place the frosting into individual sandwich or quart sized Ziploc bags.
Snip off a tiny corner of each bag. The green icing for the lettuce should have a slightly larger cut.
Now its time to assemble.
On a large cookie sheet or work space, line up the bottom portion of yellow cupcakes.
Top each one with a brownie round. Now pipe on the yellow, red and green icing as your mustard ketchup and lettuce.
Top with the other half of the cupcake and sprinkle with some sesame seeds.
Serve your faux mini burger's to amazed friends and family!!
